Healthy nutrition at school

We investigate how school‑based healthy eating initiatives can improve the food offering, accessibility, and well‑being of students. We do this because many children today still do not bring a nutritious or sufficiently filled lunchbox, and schools experience various barriers in creating a healthy food environment. With a well‑founded research design, we map out which indicators and methods are needed to reliably measure the effects and implementation of these initiatives.

Healthy and sustainable food at school is essential for the health, well‑being, and learning performance of children. Yet many students do not bring a nutritious or sufficiently filled lunchbox, which is partly linked to rising poverty rates and inequalities in the food environment. Schools are a crucial setting: they reach almost all children and play an important role in their daily dietary intake.

However, both parents and schools experience various barriers to providing a healthy food offering. Previous research also shows large differences between municipalities and schools in terms of support needs, existing initiatives, and practical feasibility. This makes a uniform approach impossible and highlights the need for systematic, well‑founded evaluation of ongoing school‑based healthy food initiatives.

With this project, we aim to determine which monitoring strategy, indicators, and data collection methods are most suitable for measuring the impact of school healthy‑food initiatives, both in the short and long term.

This project offers policymakers, schools, local authorities, and partner organizations a solid evidence‑based framework to improve and monitor initiatives around healthy food at school. By making the large differences between schools and municipalities visible, this research contributes to more targeted support and a fairer, healthier food environment for all children.
